carrot squash mash

Potatoes are one of those ‘white foods’ we shouldn’t be eating often. I hate feeling left out so I devised this delicious substitute.

Carrot Squash Mash

Ingredients

1 acorn squash, sliced down the centre and deseeded
6 carrots, cut to 1 inch sections and steamed
1 tsp butter
1 tsp tumeric
1 tsp honey

Put 2 Tbsp of water in each half of the acorn squash. Microwave for 10 mins or until soft.

Combine all ingredients in a bowl and blend with a hand blender until they reach a smooth consistency.
