Steamed broccoli is easy to digest and is a superfood. Combined with eggs it makes a perfect side dish or snack.
1 broccoli floret, steamed then finely chopped
pinch of salt
pepper to taste
1/2 tsp coconut oil
Combine the first 4 ingredients in a bowl. Place a pan on medium heat, add the coconut oil. Place the mixture in the centre of the pan in a patty shape. Allow it cook for 3-4 mins or until the egg has firmed up on the bottom. Flip and allow to cook for an additional 3-4 mins or until the egg has cooked through.
